SPROUT’S FARMERS MARKET CARNITAS
You can grab a package of precooked pork carnitas from lots of places now–Sam’s, Costco, & even Kroger. And, they finally have them at SPROUTS!
If you have a Sprout near you, then consider yourself lucky! I have to drive 15+ minutes to get to ours, but at lease we have one (NO COMPLAINTS HERE!).
If you don’t know about Sprout’s yet, it’s like the love child of Trader Joe’s & Whole Foodsl
Though the meats may be a little pricy, the quality and sourcing is certainly a grade above. So, I don’t mind paying a little bit more for quality….especially when I know I’ll be getting a deal on the veggies and bulk dried goods!
BURRITO BOWL TOPPINGS
The beautiful & convenient thing about this recipe is that no matter who you’re serving (ahem….little children), you can tailor it to them without sacrificing your bountiful bowl of heaven.
So, let them eat just meat, rice, cheese & salsa. Fine.
Then, pile yours heavy with all that guac & fresh veggie topping!…..unless your child is like mine & hogs ALL the guac….he’s quite entitled with his guac habits, actually.
Sky’s the limit on this one though. Change up the protein, rice flavors, salsa, veggies — then change it again next week.
This is one that’s a keeper in the rotation simply because you won’t get bored!
NO COOK BURRITO BOWLS (CARNITAS)

Pre-cooked carnitas (pulled pork) plus a few ready made and fresh ingredients sets you up for a healthy, quick & tasty Mexican Monday with these NO COOK BURRITO BOWLS.
Ingredients
- 1 package pre-cooked Carnitas (pulled pork)
- 2 packages pre-cooked rice
- 1 container pre-made guacamole
- 2 c. shredded cheddar cheese
- 1 jar black bean & corn salsa
- 7 oz fresh baby spinach
Instructions
- Heat carnitas (pulled pork) according to package directions.
- Heat ready rice according to package directions.
- When heated, shred pork in container with juice from package.
- Assemble the burrito bowl by adding rice & meat to the bowl first, approximately 1 cup of each.
- Then, add spinach, approximately 1 cup.
- Top with cheddar cheese, approximately 1/3 cup, salsa (1/3 cup), & guacamole (1/3 cup).
- Enjoy!
Notes
- Any ready rice can be used in this recipe. Some great options are: Spanish rice, brown rice, & cilantro lime rice.
- OPTIONAL SIDE: Sprouts Farmers Market has jalapeno cheddar focaccia muffins in its bakery department. These are amazing & highly recommend. Or, cornbread from your local bakery would be great as a side. Of course, tortilla chips are perfect in a pinch!
- Substitute any of your favorite meat, veggies, or cheeses in this dish! It's incredibly flexible & that's what makes it such a great recipe to practice making. You'll never get bored of all the versions of this dish.
VEGGIE PACKED BURRITO BOWLS
Here’s a pro-tip when it comes to kids: let them choose.
Yep, set out all the toppings & let your little one decide how much he or she wants of each. I know that can be a tall order, but give it a try.
Sometimes they just want to flex those independence muscles a bit before acquiescing to your requests. This gives you a chance to humor them a little…..a little, let’s not get crazy though:)
