When it comes to easy weeknight meals, one pot dinners are high on the list! Think Hamburger Helper for the 21st Century. Fresh ingredients, less processed foods, and a slight sense of pride that you made something tasty and nutritious for your family in less time than it takes to get delivery. Not bad for a full day of work and mommin’.

Low Prep Slow Cooker Dinners
An oldie but a goodie when it comes to easy weeknight meals! That’s right, the mother of all time savers: the Crock-Pot. Gotta love a slow cooker, amiright? Well, no….I guess you’ve probably had some pretty sad Crock-Pot dishes where everything is bland or mushy. Ick. My Chicken Cacciatore will totally vindicate the Crock-Pot!
Chicken thighs, white wine, tomatoes & a few other veggies. Heaven. I’m telling you, your kids will love this one, too!
Added bonus: my hubs had zero problems dumping all these ingredients into a machine and turning it on. Let me just say, if you’re trying to figure out how to get your partner to help you out in the kitchen a few nights a week, then let him try this recipe.

If you haven’t tried Greek Yogurt (No YEAST) Pizza crust, then you’ve gotta see it! It’s pizza dough made from Greek yogurt & flour! Spread that dough out on a well oiled sheet pan and pile on the toppings Anything goes with this super easy pizza using ingredients you already have on hand. Plus, it’s ready in under 30 minutes—seriously!
It doesn’t get easier than Meatball Gyros. The only thing you have to do is cook the premade meatballs. The rest is simple assembly, thanks to the premade tzatziki sauce! If your kids love anything meatball related, then give this one a try!
