Are you tired of the drive-thru? Beat the weeknight struggle with recipes that get dinner on the table STAT.
Ya know what’s fun? Trying to figure out what’s for dinner on a weeknight–said nobody ever. But, whether you’re juggling toddlers and your new job from home, or racing against the clock to pick up those kids from daycare—dinner is always on the horizon.
If you’re looking for time savers, quick fixes, & a whole lot of fresh flavor, then you’re in the right place.
I’ve picked my TOP 10 recipes for quick & easy weeknight dinners that will have a (mostly) fresh meal on the table faster and a whole lot cheaper than delivery.

MAKE WEEKNIGHT DINNERS EASY
There are a number of ways to get dinner on the table in a flash. If you follow this breakdown, then you’ll see how easy it can be to beat the clock on a busy week night.
QUICK ONE POT DINNERS
When it comes to easy weeknight meals, one pot dinners are high on the list. Think Hamburger Helper for the 21st Century. Fresh ingredients, less processed foods, and a slight sense of pride that you made something tasty and nutritious for your family in less time than it takes to get delivery.
Not bad for a full day of work and mommin’.
My two new favorites are One Pot Taco Pasta and One Pot Turkey Tetrazzini.
LOW PREP SLOW COOKER DINNERS
An oldie but a goodie when it comes to easy weeknight meals! That’s right, the mother of all time savers: the Crock-Pot. Gotta love a slow cooker, amiright?
Well, no….I guess you’ve probably had some pretty sad Crock-Pot dishes where everything is bland or mushy. Ick.
But, I’m telling you right now–my Chicken Cacciatore will totally vindicate the Crock-Pot!
Chicken thighs, white wine, tomatoes & a few other veggies. Heaven. I’m telling you, your kids will love this one, too!
Added bonus: my hubs had zero problems dumping all these ingredients into a machine and turning it on. Maybe yours could give it a-go, too?? Just sayin….
TIP FOR MAKING DINNER WITH NO TIME
Let there be NO mistake: if you’re a working mom, then you need to say YES to all shortcuts. Premade ingredients can make gloriously easy weeknight meals come together fast.
GOAL: Avoid drive-thru & delivery. Ready made main ingredients & ready made side dishes help you accomplish this goal by cutting time, saving you energy & zero skills needed to re-heat. BOOM.
Embrace the world of precooked rotisserie chickens, microwave ready pulled pork, and oven ready meatballs.
In fact, I have made it my mission to help give you a ton of new ways to take advantage of these ready made main ingredients.
Simple meals using some seriously delicious short cuts are the key to getting through the work week. Trust me, I know!

SHEET PAN DINNERS
If you haven’t tried Greek Yogurt (No YEAST) Pizza crust, then you’ve gotta see it! It’s pizza dough made from Greek yogurt & flour! Crazy…I know.
Plus, it’s ready in under 30 minutes—seriously!
It doesn’t get easier than Meatball Gyros. The only thing you have to do is cook the premade meatballs. The rest is simple assembly, thanks to the premade tzatziki sauce.
If your kids love anything meatball related, then give this one a try.
Added bonus: my kitchen skills-challenged husband can tackle this dinner all by himself. Sounds enticing, right? Getting your hubs in the kitchen a few nights a week MAY actually be doable with a few recipes like this.

It’s like the best shortcut ever if you are a lover of crispy chicken skin.
Finally, a family fav (and a winner on any Meatless Monday) is this Muffin Tin Veggie Pot Pies made with yummy buttery puff pastry.
